Steak tartare as a drone, with pickle rotors and sharp dressing: tension on the plate.

Spicy steak tartare shaped like a drone, with pickle sticks as rotor arms and a sharp, tangy dressing. The layout references the drone delivering contraband, with bold flavors reflecting the tension in the news.

Ingredients

  • 400 g sirloin steak (cut into small cubes)
  • 4 egg yolks
  • 2 tbsp capers
  • 2 tbsp finely chopped shallot
  • 4 pickles (long, firm)
  • 2 tbsp coarse mustard
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Tabasco
  • 4 tbsp olive oil
  • 2 tbsp white wine vinegar
  • salt and pepper
  • 4 radishes
  • 8 small salted chips (for the 'cargo')

Method

  1. Cut the steak into tiny cubes.
  2. Mix the steak with shallot, capers, mustard, Worcestershire sauce, Tabasco, olive oil, and vinegar. Season with salt and pepper.
  3. Slice the pickles lengthwise to get 8 long half-sticks.
  4. On each plate, form a round flat tartare (about 8 cm diameter) in the center.
  5. Lay 2 half pickles per tartare in a cross as rotor arms (like a drone with four arms).
  6. Place an egg yolk in the center as the 'cockpit'.
  7. Slice radishes thinly and place them as small details at the ends of the pickle arms.
  8. Place two small chips on the tartare as symbolic 'cargo'.
  9. Drizzle extra vinegar and olive oil around for more sharpness.

Serving notes

  • Serve ice cold for extra tension.
  • Let guests pierce the egg yolk themselves for a 'drone drop' effect.
