Drone Guard Soup

Carrots as drones in formation solemnly guard Latvian vegetable soup.

Clear Latvian vegetable soup topped with four diagonally placed, roasted carrot sticks representing drones guarding the airspace. The carrots are set in strict formation above the soup, referencing the drone defense from the news.

Ingredients

  • 2 liters vegetable stock
  • 4 medium carrots
  • 2 leeks
  • 2 potatoes
  • 1 onion
  • 2 cloves garlic
  • 2 bay leaves
  • 1 tablespoon oil
  • salt and pepper to taste
  • 4 sprigs dill (for garnish)

Method

  1. Peel the carrots and cut four long, straight pieces of 15 cm. Dice the rest of the carrot.
  2. Preheat oven to 200°C. Brush the long carrot pieces with oil, place on baking paper and roast for 20 minutes until lightly browned.
  3. Chop onion, garlic, leek, and potato into pieces.
  4. Sauté onion and garlic in a soup pot with oil. Add leek, potato, carrot cubes, and bay leaf, cook for 5 minutes.
  5. Add stock, bring to a boil and simmer for 20 minutes.
  6. Remove bay leaves. Season with salt and pepper.
  7. Divide soup among four deep plates. Place two carrot sticks diagonally across each bowl, crossing like drones in formation.
  8. Garnish with a sprig of dill.

Serving notes

  • Serve in deep white bowls for a formal effect.
  • Place the carrot sticks on the soup just before serving so they stay on top.
