Drone Tartare with Sharp Interceptor

A beet tartare runway with hovering toast drones and alarm sauce: NATO tension on your plate.

On a long black plate, a tartare of sharp, tangy beet and pickle forms a runway. Three crispy toast strips hover above as interceptor drones. Red-yellow mustard sauce marks recent incidents. The plate visualizes NATO's tense fight against intruders: sharp, tense, alert.

Ingredients

  • 2 large raw beets
  • 4 pickles
  • 1 red onion
  • 2 tablespoons capers
  • 2 tablespoons wholegrain mustard
  • 2 tablespoons mayonnaise
  • 1 tablespoon white wine vinegar
  • 8 slices sturdy sourdough bread
  • 2 tablespoons olive oil
  • 1 red chili pepper
  • salt and black pepper
  • fresh dill for garnish

Method

  1. Preheat the oven to 180°C.
  2. Peel and coarsely grate the beets. Finely chop the pickles, red onion, and capers.
  3. Mix beet, pickle, onion, capers, mustard, mayonnaise, and vinegar into a tartare. Season with salt, pepper, and finely chopped chili pepper.
  4. Cut the bread into long, thin strips. Brush with olive oil and bake 8-10 minutes until crisp.
  5. On each rectangular black plate, form a wide strip of tartare as a runway.
  6. Place three toast strips diagonally above the strip as interceptor drones.
  7. Dot mustard sauce in three spots along the strip as alarm markers.
  8. Garnish with fresh dill.

Serving notes

  • Serve on a rectangular black plate for the runway effect.
  • Make sure the toast drones hover above the tartare.
  • Dot the mustard sauce clearly, do not smear.
