Emergency Landing Tabouleh

A chicken dive on tabouleh, with carrot as emergency signal: tension served on your plate.

A sharp tabouleh with grilled chicken fillet as the airplane, carrot as the dive path, and lemon as the emergency signal. The chicken lies diagonally atop a mountain of fresh, tangy tabouleh, with a bright carrot strip marking the dive. Ingredients

  • 700 g chicken breast
  • 200 g bulgur
  • 1 cucumber
  • 3 tomatoes
  • 1 bunch parsley
  • 1 bunch mint
  • 2 lemons
  • 2 cloves garlic
  • 2 carrots
  • 4 tbsp olive oil
  • 1 red onion
  • 1 tsp ground cumin
  • 1 tsp pul biber (or chili flakes)
  • salt and pepper

Method

  1. Cook the bulgur according to package instructions and let cool.
  2. Finely chop the cucumber, tomatoes, red onion, parsley, and mint.
  3. Mix the bulgur with the chopped vegetables and herbs.
  4. Squeeze the lemons and mix the juice with olive oil, pressed garlic, cumin, pul biber, salt and pepper for a dressing.
  5. Mix the dressing through the tabouleh and let it marinate for at least 30 minutes.
  6. Cut the chicken breasts into long, slightly diagonal strips. Season with salt, pepper, and a bit of lemon juice.
  7. Grill the chicken strips on high heat until cooked and lightly browned.
  8. Peel the carrots and cut them into long, thin strips.
  9. On each plate, make a mound of tabouleh. Lay a chicken strip diagonally over the tabouleh as a descending airplane.
  10. Lay a carrot strip diagonally next to the chicken as a dive path. Garnish with a lemon slice as an emergency signal.

Serving notes

  • Serve with extra lemon wedges for added tang and tension.
  • Sprinkle extra pul biber over the chicken for more heat.
  • Arrange the plates so the airplane clearly dives toward the edge.
