Emergency Soup with Rolling Chairs

Indonesian chicken soup with rolling egg and carrot chairs as a nod to the hospital rush.

A comforting Indonesian chicken soup with rice, topped with halved boiled eggs as wheelchair wheels and carrot sticks as chairs. The disaster literally rolls into your bowl, but now it’s safe and warm.

Ingredients

  • 1 whole chicken (approx. 1.2 kg, on the bone)
  • 2 liters water
  • 2 onions
  • 3 cloves garlic
  • 3 cm fresh ginger
  • 2 stalks lemongrass
  • 2 bay leaves
  • 1 red chili pepper
  • 3 large carrots
  • 150 g pandan rice
  • 4 eggs
  • 3 tbsp soy sauce
  • 1 lime
  • 2 spring onions
  • salt and pepper to taste
  • fresh coriander (optional)

Method

  1. Cut the chicken into pieces. Place in a large pot with 2 liters of water. Bring to a boil and skim.
  2. Chop the onions, garlic, and ginger roughly. Bruise the lemongrass.
  3. Add onion, garlic, ginger, lemongrass, bay leaves, and chili to the pot. Simmer for 45 minutes.
  4. Meanwhile, cook the pandan rice as per package instructions. Boil the eggs for 8 minutes until hard, cool and peel.
  5. Cut 2 carrots into long strips (about 8 cm) and the rest into cubes. Blanch the strips for 2 minutes in boiling water.
  6. Remove the chicken from the soup, shred the meat, and return it to the pot. Add the carrot cubes and cook for 5 minutes.
  7. Season the soup with soy sauce, salt, pepper, and lime juice.
  8. Slice the eggs in half lengthwise. Slice the spring onions.
  9. Divide rice among 4 bowls, ladle over the soup. In each bowl, place 2 egg halves (rounded side down) as wheels and 2 carrot strips between them as a 'wheelchair'.
  10. Garnish with spring onion and coriander if desired.

Serving notes

  • Serve immediately so the wheelchairs remain visible.
  • Serve lime wedges on the side for extra freshness.
