Africa shines large as a vibrant vegetable mosaic in this festive oven dish for everyone at the table.
Ingredients
- 1 large eggplant
- 2 red bell peppers
- 2 yellow bell peppers
- 1 zucchini
- 4 medium sweet potatoes
- 2 red onions
- 2 cans diced tomatoes (400 g each)
- 2 cloves garlic
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 400 g chickpeas (drained)
- 200 g feta cheese
- 4 tbsp olive oil
- 1 bunch coriander
- salt and pepper to taste
Method
- Preheat the oven to 200°C.
- Peel the sweet potatoes and cut into thick slices. Parboil for 10 minutes and drain.
- Slice the eggplant lengthwise and then into thick slices. Cut the bell peppers into wide strips. Slice the zucchini diagonally. Cut the red onions into wedges.
- Toss all vegetables with olive oil, paprika, cumin, salt, and pepper.
- Line a large oven dish with baking paper. Arrange the sweet potato slices as a sturdy base. Using the eggplant, peppers, zucchini, and onion, shape the silhouette of the African continent: broad in the middle, tapering downwards, with a recognizable 'horn' on the east side made from pepper.
- Mix the diced tomatoes with pressed garlic and chickpeas, and spread around the 'Africa' vegetable mosaic.
- Crumble feta over the vegetable mosaic. Bake for 35-40 minutes in the center of the oven.
- Sprinkle with roughly chopped coriander and serve straight from the dish.
Serving notes
- Serve the dish in the center of the table so everyone can share the continent together.
- Add flatbread or couscous for an extra festive touch.
