Espionage Strudel Quartet

Based on:

TypeDessert

Serves4 people

DateOctober 23, 2026

Four strudels in formation, as sharp and sour as a diplomatic expulsion.

Four mini apple strudels stand in a straight line like diplomats before the Vienna embassy, each filled with sharp apple and lemon. The setup refers to the four expelled Russians and their role in the spy network.

Ingredients

  • 4 sheets filo pastry
  • 3 tart apples (e.g., Granny Smith)
  • 1 lemon (zest and juice)
  • 60 g sugar
  • 40 g raisins
  • 40 g chopped walnuts
  • 2 tsp cinnamon
  • 50 g melted butter
  • powdered sugar (for dusting)
  • pinch of salt

Method

  1. Preheat the oven to 200°C and line a baking tray with parchment paper.
  2. Peel, core, and dice the apples.
  3. Mix apple cubes with lemon zest, lemon juice, sugar, raisins, walnuts, cinnamon, and a pinch of salt.
  4. Place a sheet of filo pastry on the work surface, brush with melted butter, and lay another sheet on top.
  5. Spread a quarter of the apple mixture on the pastry, roll up tightly into a mini strudel. Repeat until you have four strudels.
  6. Place the strudels in a straight line on the baking tray, with small gaps, like a row of diplomats.
  7. Brush the tops with the remaining butter.
  8. Bake the strudels for 20-25 minutes until golden and crisp.
  9. Let cool slightly and dust generously with powdered sugar.
  10. Serve the strudels in a straight row on a platter, referencing the four expelled spies.

Serving notes

  • Serve with a sharp scoop of lemon ice cream for extra tension.
  • Stand the strudels upright as a formal diplomat row for effect.
  • Garnish with a thin curl of lemon zest as a 'diplomatic sash'.
