Etna Ash Cloud Tartare

Tuna tartare as Etna with olive ash cloud and sharp horseradish: tension on the plate.

A starter of spicy tuna tartare, stacked as Mount Etna with a dramatic ash cloud of black olives and crispy onions. The smoke plume is suggested by a streak of sharp horseradish cream. Tension, sharpness, and unmistakable Etna on the plate.

Ingredients

  • 300 g fresh tuna (sashimi quality)
  • 1 small red onion
  • 2 tbsp capers
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp soy sauce
  • 1 tbsp sriracha
  • 50 g black olives (pitted)
  • 2 tbsp crispy fried onions
  • 4 tbsp crème fraîche
  • 2 tsp horseradish paste
  • salt and pepper
  • 1 bunch chives

Method

  1. Cut the tuna into small cubes.
  2. Finely chop the red onion and roughly chop the capers.
  3. Mix tuna, onion, capers, olive oil, lemon juice, soy sauce, and sriracha. Season with salt and pepper.
  4. Chop the black olives finely.
  5. Mix crème fraîche with horseradish paste and a pinch of salt.
  6. Place a round ring (or glass) in the center of each plate and fill with tuna tartare to form a mountain shape.
  7. Sprinkle the chopped olives and crispy onions as an 'ash cloud' on one side atop the mountain.
  8. Drag a streak of horseradish cream from the top of the mountain upwards as a smoke plume.
  9. Garnish with finely snipped chives for extra 'smoke'.

Serving notes

  • Serve immediately for maximum freshness.
  • Make sure the smoke plume and ash cloud remain clearly visible.
  • Optionally serve extra horseradish cream on the side.
