Evacuation Salad Magdeburg

Warm potato salad in a large oval dish shaped like a hospital wing. Smoky grilled peppers as fire damage, three mozzarella 'beds' spread to the edge as evacuated patients. A comforting, quick meal that visually shows the chaos of evacuation.

Ingredients

  • 800 g waxy potatoes
  • 2 red bell peppers
  • 2 red onions
  • 4 tbsp olive oil
  • 2 tbsp white wine vinegar
  • 1 tsp smoked paprika powder
  • 200 g lamb's lettuce
  • 3 balls mozzarella
  • salt and pepper to taste

Method

  1. Peel the potatoes and cut into large chunks. Boil for 15 minutes until tender, drain and let cool slightly.
  2. Heat a grill pan. Slice the peppers into strips, brush with 1 tbsp oil and grill until charred.
  3. Slice the onions into thin rings. Mix with 2 tbsp oil and paprika powder in a bowl.
  4. Cut the potatoes into slices. Mix with onion, grilled peppers, vinegar, 1 tbsp oil, salt and pepper.
  5. Spread the lamb's lettuce in a large oval dish. Spoon the potato salad on top.
  6. Tear the mozzarella into three large pieces. Place these along the edge of the dish as beds near the exit.
  7. Serve lukewarm.

Serving notes

  • Arrange the mozzarella clearly at the edge as evacuated beds.
  • Serve the salad in an oval dish for the 'hospital effect'.
  • Let the grill marks on the peppers show as 'smoke damage'.
