Exhausted Sailor’s Stew

Everything in one dish, for when you’re exhausted but still want something warm.

A warm, comforting oven dish with potato, leek, carrot and pieces of fish. Like the crew: everything together in one dish, exhausted but resilient. Perfect after a long day at sea or on land.

Ingredients

  • 800 g potatoes
  • 2 leeks
  • 3 carrots
  • 400 g cod fillet
  • 1 onion
  • 2 cloves garlic
  • 200 ml cooking cream
  • 50 g grated cheese
  • 2 tbsp olive oil
  • 1 tsp thyme
  • salt and pepper to taste

Method

  1. Preheat the oven to 200°C.
  2. Peel the potatoes and slice them thinly.
  3. Slice the leeks into rings, the carrots thinly, finely chop the onion and garlic.
  4. Heat olive oil in a pan and sauté onion and garlic until translucent.
  5. Add carrot and leek, fry for 5 minutes.
  6. Grease an oven dish. Place a layer of potato slices on the bottom.
  7. Spread half of the vegetable mixture over it.
  8. Cut the cod into pieces, place half on the vegetables.
  9. Repeat with the remaining potato, vegetables and fish.
  10. Mix the cream with thyme, salt and pepper. Pour over the dish.
  11. Sprinkle with cheese.
  12. Bake for 35-40 minutes until cooked and golden brown.

Serving notes

  • Serve with a simple green salad, for a bit of 'fresh' on board.
  • Garnish with extra thyme, as a nod to the endless wait for relief.
