Exhausted Sailor’s Stew

Everything in one dish, for when you’re exhausted but still want something warm.
Ingredients
- 800 g potatoes
- 2 leeks
- 3 carrots
- 400 g cod fillet
- 1 onion
- 2 cloves garlic
- 200 ml cooking cream
- 50 g grated cheese
- 2 tbsp olive oil
- 1 tsp thyme
- salt and pepper to taste
Method
- Preheat the oven to 200°C.
- Peel the potatoes and slice them thinly.
- Slice the leeks into rings, the carrots thinly, finely chop the onion and garlic.
- Heat olive oil in a pan and sauté onion and garlic until translucent.
- Add carrot and leek, fry for 5 minutes.
- Grease an oven dish. Place a layer of potato slices on the bottom.
- Spread half of the vegetable mixture over it.
- Cut the cod into pieces, place half on the vegetables.
- Repeat with the remaining potato, vegetables and fish.
- Mix the cream with thyme, salt and pepper. Pour over the dish.
- Sprinkle with cheese.
- Bake for 35-40 minutes until cooked and golden brown.
Serving notes
- Serve with a simple green salad, for a bit of 'fresh' on board.
- Garnish with extra thyme, as a nod to the endless wait for relief.
