Two green bean jets fly over a mash cockpit and stew: tension and sharpness on your plate.

A spicy beef stew served with two sharp green beans flying diagonally over a round mash 'cockpit'. The plate captures the news moment: tension, sharpness, and a safe landing.

Ingredients

  • 800 g beef stewing meat
  • 2 onions
  • 3 cloves garlic
  • 2 tbsp tomato paste
  • 1 red bell pepper
  • 2 tbsp flour
  • 400 ml beef stock
  • 2 tbsp red wine vinegar
  • 1 tbsp paprika powder
  • 1 tsp cayenne pepper
  • 700 g floury potatoes
  • 50 ml milk
  • 30 g butter
  • 300 g green beans
  • olive oil
  • salt and pepper

Method

  1. Cut the beef into chunks, season with salt, pepper, and flour.
  2. Heat olive oil in a stew pot, brown the meat on all sides.
  3. Chop the onions and garlic. Add to the meat and cook for 5 minutes.
  4. Slice the bell pepper into strips and add.
  5. Add tomato paste and briefly fry.
  6. Add paprika and cayenne, deglaze with red wine vinegar.
  7. Pour in the stock, bring to a boil, then simmer covered for 2 hours.
  8. Peel and boil the potatoes for 20 minutes, drain and mash with milk and butter. Season with salt.
  9. Boil the green beans for 5 minutes until just tender, drain.
  10. Spoon a round 'cockpit' of mash in the center of each plate.
  11. Spoon stew around the mash.
  12. Lay two green beans diagonally across the mash like jets in flight.

Serving notes

  • Drizzle some stew sauce as 'jet trails' behind the green bean jets.
  • Serve with extra cayenne for those who like more tension.
