Flare Parfait with Helicopter Shadow

Helicopter parfait with fiery flares: tension, tartness, and sharpness in one dessert.

A tangy parfait with sharp citrus sauce, arranged as a helicopter in profile. Two bright red sorbet scoops symbolize the flares, ready to fire. The tension is in the tartness and fiery color contrast.

Ingredients

  • 400 ml full-fat yogurt
  • 200 ml whipping cream
  • 100 g sugar
  • 2 lemons (juice and zest)
  • 1 lime (juice)
  • 2 tbsp vodka
  • 4 lemon slices (for the rotor)
  • 8 red sorbet scoops (raspberry or red currant)
  • 8 long biscuit sticks (e.g., ladyfingers or biscotti)
  • 1 tbsp powdered sugar
  • Fresh mint for garnish

Method

  1. Whip the cream with the sugar until stiff.
  2. Mix yogurt, lemon zest, lemon and lime juice, and vodka together.
  3. Fold the whipped cream into the yogurt mixture.
  4. Pour the mixture into a shallow dish and freeze for at least 4 hours, stirring with a fork every hour.
  5. Shape 4 long quenelles from the parfait (the helicopter body).
  6. Place a quenelle diagonally on each plate. Stand a lemon slice upright on one end as the rotor.
  7. Stick a biscuit stick on the other end as the tail.
  8. Place 2 red sorbet scoops diagonally in front of the helicopter as flares.
  9. Dust with powdered sugar and garnish with mint.

Serving notes

  • Serve on a dark plate for extra tension.
  • Drizzle extra lemon juice around the sorbet scoops for sharpness.
  • Let the sorbet scoops just touch the parfait, as if just fired.
