Wave of radish and cucumber with an egg as buoy: tension and tang on your plate.
Thin slices of spicy radish and tangy pickled cucumber form the wavy lines of a flood wave, with a halved egg as a ‘floating buoy’. The plate directly references the Nepal flood, with tension between sharp and sour flavors.
Ingredients
- 2 long cucumbers
- 8 radishes
- 4 eggs
- 60 ml rice vinegar
- 2 tbsp sugar
- 1 tsp salt
- 1 red chili pepper
- 1 tbsp sesame oil
- 1 bunch coriander
- pepper to taste
Method
- Slice the cucumbers into long ribbons with a cheese slicer.
- Mix rice vinegar with sugar and salt. Marinate the cucumber ribbons for 20 minutes.
- Slice the radishes very thinly.
- Boil the eggs for 8 minutes, cool and peel. Halve the eggs.
- Cut the red chili into thin rings.
- On each plate, arrange a wavy line of pickled cucumber ribbons.
- Place the radish slices as foam on the wave.
- Place a halved egg as a ‘buoy’ on the wave.
- Drizzle sesame oil over the vegetables, sprinkle with pepper and chili rings.
- Garnish with coriander.
Serving notes
- Serve cold for extra tension.
- Keep the egg visible as a buoy in the wave.
- Offer chopsticks for an Asian touch.
