The suitcase with the diamond: a side dish that literally brings the news to your plate.

A neatly plated side dish: a halved boiled potato as a 'suitcase', topped with a faceted slice of yellow beet as the Florentiner diamond. The suitcase shape refers to the famous case in which the diamond was hidden. The yellow beet shines as the exhibition’s centerpiece.

Ingredients

  • 4 medium waxy potatoes
  • 1 large yellow beet, cooked
  • 2 tablespoons crème fraîche
  • 1 tablespoon chives, finely chopped
  • Salt to taste
  • Freshly ground black pepper
  • 1 teaspoon olive oil

Method

  1. Peel the potatoes and boil them in salted water until cooked but still firm. Let cool.
  2. Slice the potatoes lengthwise in half. Carefully hollow them out a bit with a spoon to create a 'suitcase shape'.
  3. Mix crème fraîche with chives, salt, and pepper. Fill each potato half with a spoonful of this mixture.
  4. Cut the cooked yellow beet into thick slices. From each slice, cut a large, angular diamond shape (just with a knife, no fine carving).
  5. Place a beet slice upright on each potato half, so it forms the diamond on the suitcase.
  6. Brush the beet lightly with olive oil for extra shine.
  7. Arrange the suitcases neatly on a rectangular platter, with the 'diamond' clearly visible.

Serving notes

  • Serve on a white platter for maximum 'museum' effect.
  • Optionally garnish with an extra sprinkle of chives as a 'latch' on the suitcase.
