Flores Rubble Bake

A comforting casserole with visible rubble, bamboo and an egg yolk as the 'miracle' in the center.

A warm Indonesian potato casserole in an oval oven dish, with grilled asparagus 'bamboo' on top and parsley as 'rubble'. In the center, a single egg yolk represents the miracle survivor found amid the debris.

Ingredients

  • 800 g floury potatoes
  • 2 red onions
  • 2 cloves garlic
  • 1 red bell pepper
  • 1 green bell pepper
  • 2 tablespoons sunflower oil
  • 200 ml coconut milk
  • 2 tablespoons sweet soy sauce (ketjap manis)
  • 1 teaspoon turmeric
  • 1 teaspoon ground ginger
  • salt and pepper to taste
  • 4 eggs
  • handful fresh parsley
  • 4 thin green asparagus spears

Method

  1. Preheat the oven to 200°C and grease an oval oven dish.
  2. Peel and dice the potatoes, boil them for 10 minutes in salted water, then drain.
  3. Finely chop the onion and garlic. Dice the bell peppers.
  4. Heat the oil in a frying pan, sauté onion and garlic for 2 minutes. Add bell peppers and fry for 5 minutes.
  5. Add the potato cubes and fry for another 3 minutes.
  6. Stir in coconut milk, ketjap, turmeric, ginger, salt and pepper. Spoon everything into the oven dish.
  7. Make a well in the center with a spoon. Crack one egg into it, keeping the yolk whole.
  8. Slice the asparagus lengthwise. Lay them crisscrossed on top as collapsed bamboo.
  9. Bake for 20 minutes until the egg white is set and asparagus lightly roasted.
  10. Garnish with parsley as 'rubble' around the egg.

Serving notes

  • Serve straight from the oval dish to keep the rubble scene visible.
  • Spoon carefully around the egg so the 'miracle' stays intact.
