Freezer Display Salad

Festive salad with bread as centerpiece, echoing the DDR loaf in the museum display.

A festive German salad featuring slices of rye bread arranged like the famous frozen DDR loaf in a glass display. Surrounded by fresh greens, pickles, sausage, and egg, this centerpiece celebrates unity and history.

Ingredients

  • 4 thick slices rye bread (preferably sourdough)
  • 150 g German cervelat sausage, sliced
  • 4 eggs
  • 2 large pickles, halved lengthwise
  • 200 g mixed greens (e.g. lamb's lettuce, rocket, little gem)
  • 1 red onion, thinly sliced
  • 200 g cherry tomatoes, halved
  • 4 tbsp coarse mustard
  • 4 tbsp crème fraîche
  • 2 tbsp white wine vinegar
  • 2 tbsp sunflower oil
  • Salt and pepper to taste

Method

  1. Boil the eggs for 8 minutes until hard, cool and peel, then slice thickly.
  2. Mix mustard, crème fraîche, vinegar, oil, salt, and pepper into a dressing.
  3. Lay the mixed greens in a wide stripe across the center of a large platter.
  4. Stand the 4 slices of rye bread upright next to each other, like a loaf in a display case, in the middle of the greens.
  5. Place the halved pickles on both sides of the bread, angled, as if cooling blocks.
  6. Arrange the sausage, tomato, onion, and egg slices around the bread, as if the bread is being cooled and displayed.
  7. Drizzle the dressing over the salad and serve immediately.

Serving notes

  • Serve on a glass or white platter for the display effect.
  • Brush the bread lightly with oil for a 'frozen' shine.
  • Place the platter in the center of the table for sharing.
