Block towers of beet and feta, neatly stacked, with a spicy dressing hidden inside.

A neatly plated side dish of marinated beet and feta, stacked into a blocky tower: a nod to the frozen assets and blockade from the sanctions news. The outside looks neat, but a sharp dressing is hidden inside.

Ingredients

  • 3 medium cooked and peeled red beets
  • 200 g feta cheese
  • 2 tbsp capers
  • 2 tbsp finely chopped dill
  • 3 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tsp mustard
  • 1 tsp honey
  • black pepper
  • salt

Method

  1. Cut the beets into thick slices about 1 cm thick.
  2. Cut the feta into cubes of about 1x1 cm.
  3. Mix olive oil, white wine vinegar, mustard, honey, pepper, and salt into a sharp dressing.
  4. On each plate, build a square tower by alternating beet slices and feta cubes, 3 to 4 layers high.
  5. Sprinkle capers and dill over the towers.
  6. Drizzle the dressing carefully over and between the blocks, so it is partly hidden.
  7. Serve immediately to keep the blocks in shape.

Serving notes

  • Make each tower as neat as possible for the best blockade effect.
  • Serve on a white plate for maximum contrast.
