Parfait as a fuel pump, with sharp lemon and fiery sauce: tension on the plate.

A sharp-tart parfait with spicy sauce, assembled as a fuel pump with a slanted 'hose' of candied lemon. The striking plating directly refers to the gas pump in the news, with tension between sweet and sour.

Ingredients

  • 4 lemons
  • 200 g sugar
  • 400 ml whipping cream
  • 4 egg yolks
  • 100 g Greek yogurt
  • 1 vanilla pod
  • 100 g dark chocolate
  • 2 red chili peppers
  • 2 tbsp honey
  • 1 tbsp cornstarch
  • 50 ml water
  • 4 ladyfingers

Method

  1. Zest and juice 3 lemons. Boil juice and zest with 100 g sugar, let steep for 5 minutes. Cool down.
  2. Whip the cream until stiff. Beat the egg yolks with 50 g sugar until fluffy. Mix yogurt, vanilla seeds, and lemon syrup into the yolks.
  3. Fold in the whipped cream. Pour into a square mold and freeze for at least 4 hours.
  4. Slice the fourth lemon thinly. Simmer slices for 10 minutes with 50 g sugar and 50 ml water until glossy. Drain.
  5. Melt the chocolate au bain-marie. On baking paper, shape four rectangles (5x8 cm) and let harden.
  6. Finely chop the chili peppers. Boil with honey and 1 tbsp water. Thicken with cornstarch. Cool to a sauce.
  7. Cut the parfait into 5x8 cm blocks. Place on the chocolate rectangle. Lean a ladyfinger diagonally as the 'hose'. Drape a candied lemon slice as a curve. Spoon some spicy sauce over the parfait.

Serving notes

  • Serve on a long plate so the 'fuel pump' is clearly visible.
  • Garnish with extra lemon zest for added sharpness.
  • Serve the sauce on the side for those who want more tension.
