DateOctober 16, 2026

Warm salad shaped like a lung, as a nod to the Pope in hospital.

Warm salad with grilled aubergine and peppers, arranged like a lung X-ray: aubergine as trachea and bronchi, pepper halves as lung lobes. Comforting and hearty. The wink: the lung as the news object, clearly visible on the plate.

Ingredients

  • 2 large aubergines
  • 2 red bell peppers
  • 1 yellow bell pepper
  • 200 g feta cheese
  • 1 can chickpeas (400 g, drained)
  • 100 g lamb's lettuce
  • 4 tbsp olive oil
  • 1 lemon (juice)
  • 2 cloves garlic
  • 1 tsp smoked paprika powder
  • salt and pepper to taste

Method

  1. Preheat the oven to 200°C.
  2. Slice the aubergines lengthwise into thick slices (about 1 cm).
  3. Halve the peppers, remove seeds. Cut the red peppers into wide strips, the yellow pepper into half rings.
  4. Mix aubergine slices and pepper pieces with 2 tbsp olive oil, paprika powder, salt and pepper. Roast 25 minutes on baking paper until soft and golden brown.
  5. Drain the chickpeas. Mix with 1 tbsp olive oil, 1 crushed garlic clove, salt and pepper. Fry 10 minutes in a frying pan until crispy.
  6. Make a dressing from lemon juice, 1 tbsp olive oil, 1 crushed garlic clove, salt and pepper.
  7. Place the lamb's lettuce on a large platter. Arrange the aubergine slices as a 'trachea' with branches (bronchi) in the center. Lay the red and yellow pepper pieces as 'lung lobes' on either side of the aubergine.
  8. Scatter the chickpeas as small nodules over the lungs. Crumble the feta as 'white spots' on the lungs.
  9. Drizzle with the dressing.

Serving notes

  • Serve on a large white platter for the X-ray effect.
  • Add warm baguette for extra comfort.
