Glacier Wave Salad

Warm salad as a glacier breaking into a wave across the bowl.

A warm salad shaped like a broken glacier: a mountain of potatoes, blue-veined feta as ice, and a wave of river vegetables. The presentation echoes the Nepal disaster’s flood, comforting and hearty, no fuss.

Ingredients

  • 800 g waxy potatoes
  • 200 g feta (preferably blue-veined)
  • 1 cucumber
  • 2 stalks celery
  • 1 small fennel bulb
  • 100 g lamb’s lettuce
  • 1 bunch fresh dill
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp capers
  • pepper and salt

Method

  1. Peel the potatoes, cut into large chunks and boil in salted water until tender. Drain and let cool slightly.
  2. Cut the feta into rough, irregular chunks.
  3. Slice the cucumber lengthwise into thin ribbons. Slice the celery and fennel diagonally. Slice the red onion into half rings.
  4. Make a dressing from olive oil, lemon juice, chopped dill, capers, pepper and salt.
  5. Mix the warm potato chunks with half the dressing and half the lamb’s lettuce.
  6. In a large bowl, build a slanted 'glacier slope' of potatoes, making a broken edge on one side. Stack the feta along this edge to look like broken ice.
  7. Let the cucumber ribbons, celery, and fennel flow out from the feta-ice edge like a 'wave' into the bowl. Scatter red onion and remaining lettuce over the wave.
  8. Drizzle with the remaining dressing and garnish with extra dill.

Serving notes

  • Serve in a large bowl so the glacier silhouette remains visible.
  • Scoop from the 'glacier' downwards at the table, like a flood wave.
