Glitter Gown Soup

A soup with a glitter gown silhouette, full of festive threads and beads, as a tribute to Mackie’s iconic designs.
Ingredients
- 2 liters chicken or vegetable broth
- 1 leek (white part only)
- 100 g glass noodles
- 2 carrots
- 1 yellow bell pepper
- 8 quail eggs
- 1 red bell pepper
- 1 bunch chives
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- salt and pepper to taste
Method
- Bring the broth to a boil in a large pot.
- Cut the leek into long, thin strips. Reserve the best part for the 'feathers'.
- Slice carrots and bell peppers into thin, long strips.
- Cook the glass noodles according to package instructions, rinse with cold water, and drain.
- Boil the quail eggs for 4 minutes, peel and halve them.
- Add carrot and bell pepper strips to the broth and simmer gently for 2 minutes.
- Stir in sesame oil and soy sauce, season with salt and pepper.
- On each plate, arrange a wide 'gown' of glass noodles in a flowing, flared shape. Drape vegetable strips over as 'glitter'.
- Place halved quail eggs as beads on the gown and create a border of leek strips as 'feathers'.
- Carefully ladle hot broth around the silhouette without disturbing it. Garnish with chives.
Serving notes
- Serve on flat plates so the silhouette remains visible.
- Sprinkle extra chives for a sparkling effect.
