Golden Bowl Heist

Dessert of sharp lemon cream in halved apricots, arranged as a line of stacked golden bowls. Crunchy pistachios as 'shards' and a hint of pepper for tension. The plate represents the stolen treasure, referencing the Villena art heist.

Ingredients

  • 8 fresh apricots
  • 2 lemons (juice and zest)
  • 250 ml whipping cream
  • 60 g sugar
  • 2 eggs
  • 1 tbsp cornstarch
  • 1 tsp white pepper
  • 40 g unsalted pistachios
  • 1 tbsp honey

Method

  1. Halve the apricots and remove the pits. Set aside.
  2. Zest and juice the lemons. Whisk eggs with sugar and cornstarch in a saucepan.
  3. Add lemon juice and zest. Heat while stirring until thickened. Let cool.
  4. Whip the cream until stiff. Fold into the cooled lemon curd. Add a pinch of white pepper.
  5. Roughly chop the pistachios.
  6. Fill each apricot half with lemon cream. For each serving, stack two filled apricots as a double bowl on the plate, in a slight row.
  7. Drizzle a little honey over each stack and sprinkle pistachios as 'shards' around.
  8. Serve immediately.

Serving notes

  • Serve on a matte black plate for dramatic effect.
  • Arrange the apricot rows at a slight angle for a 'fleeting' impression.
