Golden Cellar Tart

A festive tart with hidden treat compartments, nodding to the Belgian gold find.

A festive round tart with a thick, golden-yellow custard layer, dusted with edible gold. Four hidden compartments each hold a different treat, referencing the hidden treasure. Served on a square platter to evoke the cellar wall.

Ingredients

  • 1 roll ready-made pie dough
  • 500 ml whole milk
  • 1 vanilla pod
  • 100 g sugar
  • 4 egg yolks
  • 40 g cornstarch
  • 50 g butter
  • Edible gold dust (baking shop)
  • 4 tbsp lemon curd
  • 4 tbsp dark chocolate ganache
  • 4 tbsp raspberry jam
  • 4 tbsp chopped pistachios

Method

  1. Preheat oven to 180°C.
  2. Line a 24 cm round tart tin with the dough, prick the base.
  3. Blind bake for 20 minutes until golden. Let cool.
  4. Heat milk with vanilla pod to boiling. Meanwhile, whisk yolks with sugar and cornstarch.
  5. Pour some hot milk into the egg mix, whisk, then return to pan. Cook, stirring, until thick.
  6. Remove from heat, discard vanilla pod, stir in butter. Cool with cling film on top.
  7. Carefully cut four small square compartments in the cooled tart base, spaced evenly.
  8. Fill each compartment with a different filling: lemon curd, chocolate ganache, raspberry jam, pistachios.
  9. Fill the rest of the tart with custard, smooth the top.
  10. Generously dust with edible gold.
  11. Serve on a square platter so the compartments resemble a cellar wall.

  • Cut the tart so each slice contains a 'treasure compartment'.
  • Serve on a square platter for the cellar wall effect.
  • Optionally garnish with extra gold dust for festivity.
