Golden Dragon Landing Salad

Salad shaped as a golden Dragon capsule landing at the ISS, with warm potato and a golden egg.

A warm salad shaped like the SpaceX Dragon capsule docking at the ISS: an oval of golden roasted potato wedges, a golden egg as the capsule tip, and arugula orbiting like Earth's path. Perfect for this record-breaking flight.

Ingredients

  • 800 g small waxy potatoes
  • 4 eggs
  • 100 g arugula
  • 100 g green asparagus tips
  • 2 tbsp olive oil
  • 1 tbsp mustard
  • 1 tbsp white wine vinegar
  • 1 tsp honey
  • 50 g Parmesan cheese, shaved
  • salt and pepper

Method

  1. Preheat the oven to 200°C.
  2. Wash the potatoes and cut into wedges. Toss with 1 tbsp olive oil, salt, and pepper.
  3. Arrange the potato wedges in an oval shape on a baking tray (the capsule base) and roast for 25 minutes until golden brown.
  4. Meanwhile, boil the eggs for 7 minutes, cool under cold water, and peel.
  5. Blanch the asparagus tips for 2 minutes, then rinse with cold water.
  6. Make a dressing with mustard, white wine vinegar, honey, and 1 tbsp olive oil.
  7. On each plate, place an oval of potato wedges. Add a halved egg at the top as the capsule tip.
  8. Arrange the asparagus tips as small 'arms' on the sides of the capsule.
  9. Make a ring of arugula around the potato capsule, as an orbit around Earth.
  10. Drizzle with dressing and garnish with Parmesan cheese.

Serving notes

  • Serve immediately so the potatoes are still warm.
  • Sprinkle the cheese just before serving for a golden shine.
  • Let guests guess which record object is on their plate.
