Guardrail Tiramisu

Comfort tiramisu with slanted ladyfingers as bus and guardrail: warm solace in a dish after disaster.

A comforting tiramisu in a large dish, with ladyfingers arranged slanted and partly toppled like a bus against a guardrail. The presentation subtly nods to the accident, but mainly offers warmth and solace after a disaster.

Ingredients

  • 250 g mascarpone
  • 3 eggs
  • 100 g fine granulated sugar
  • 200 ml strong coffee, cooled
  • 4 tablespoons amaretto (optional)
  • 200 g ladyfingers
  • Cocoa powder, for dusting

Method

  1. Separate the eggs. Beat the yolks with the sugar until light yellow and creamy.
  2. Stir in the mascarpone until smooth.
  3. Beat the egg whites until stiff and gently fold them into the mascarpone mixture.
  4. Mix the coffee with the amaretto in a deep plate.
  5. Briefly dip half the ladyfingers in the coffee mixture and place them upright and slanted against one long side of a rectangular dish, forming a guardrail.
  6. Dip the rest of the ladyfingers and lay them at an angle, partly toppled and partly flat, to resemble a bus tipped against the guardrail.
  7. Spread half the mascarpone mixture over the ladyfingers.
  8. Repeat with a second layer of ladyfingers and mascarpone, repeating the bus-guardrail silhouette.
  9. Let set in the fridge for at least 3 hours.
  10. Dust generously with cocoa powder just before serving.

Serving notes

  • Serve in the dish, so everyone can scoop a piece of bus and guardrail.
  • Use a spatula to keep the silhouette intact when serving.
