Heli-Clear Soup

Clear chicken soup with helicopter blades of chicken: rescued in a single spoonful.

Clear Nepalese chicken soup with golden chicken strips as helicopter blades on top. The blades form a readable helicopter silhouette: a wink to the airborne rescue. The warm color and showy topping celebrate victory over disaster.

Ingredients

  • 2 chicken breasts (approx. 400 g)
  • 2 liters chicken stock
  • 2 carrots
  • 2 celery stalks
  • 1 onion
  • 2 cloves garlic
  • 1 piece ginger (3 cm)
  • 1 red chili
  • 2 tbsp soy sauce
  • 1 tbsp sunflower oil
  • 4 sprigs coriander
  • salt and pepper to taste

Method

  1. Cut the chicken breasts into long, thin strips (for the helicopter blades).
  2. Heat oil in a pan and brown the chicken strips on all sides. Set aside.
  3. Chop the onion, slice the carrot and celery, finely chop garlic, ginger, and red chili.
  4. Sauté onion, garlic, ginger, and chili for 2 minutes in the pan.
  5. Add carrot and celery, fry for 2 more minutes.
  6. Pour in the stock and bring to a boil. Simmer gently for 15 minutes.
  7. Season with soy sauce, salt, and pepper.
  8. Ladle the soup into bowls. Arrange 4 chicken strips per bowl in a helicopter blade shape on top of the soup. Optionally, place a small carrot slice in the center as the rotor.
  9. Garnish with coriander.

Serving notes

  • Serve in deep bowls so the chicken blades float on the surface.
  • Place the chicken strips on the soup at the last moment for the best effect.
