High Fens Fire Custard

Comfort custard with burnt crust and chocolate shavings as a burnt heathland in the rain.

A warm comfort custard in one dish, with a burnt caramel crust as scorched heath. Chocolate shavings depict burnt trees, while powdered sugar rain symbolizes hope for rain. Serve in an oval dish: the fire zone from above.

Ingredients

  • 1 liter whole milk
  • 100 g sugar
  • 1 vanilla pod
  • 4 egg yolks
  • 40 g cornstarch
  • 50 g dark chocolate
  • 4 tbsp fine granulated sugar (for the crust)
  • 1 tbsp powdered sugar

Method

  1. Heat the milk with the split vanilla pod until just below boiling.
  2. In a bowl, whisk the egg yolks with 100 g sugar until light. Add the cornstarch.
  3. Slowly pour the hot milk into the egg mixture, stirring constantly.
  4. Pour everything back into the pan and heat gently until a thick custard forms. Keep stirring.
  5. Remove the vanilla pod and pour the custard into a large oval oven dish.
  6. Let cool to lukewarm.
  7. Sprinkle 4 tbsp granulated sugar over the custard and caramelize with a blowtorch until dark and burnt.
  8. Roughly chop the dark chocolate and scatter as 'burnt trees' on one side of the dish.
  9. Sift powdered sugar over the other part as 'rain'.
  10. Serve warm or lukewarm.

Serving notes

  • Serve in an oval dish for the effect of a burning nature reserve seen from above.
  • Scatter the chocolate shavings and powdered sugar just before serving for best contrast.
