High Voltage Line Soup

A spicy soup with asparagus as power lines and halved eggs as transformers: tension you can taste.

A spicy, clear soup with long, diagonally placed green asparagus as power lines over a base of fiery tomato and sharp lemon. The asparagus rest on halved eggs as transformers: visible tension on the plate, referencing the sabotage at the power station.

Ingredients

  • 1.5 liters chicken or vegetable stock
  • 500 g ripe tomatoes
  • 2 red onions
  • 2 cloves garlic
  • 2 red chili peppers
  • 2 lemons
  • 2 tbsp olive oil
  • 16 green asparagus spears (long, straight stalks)
  • 4 eggs
  • Salt and pepper to taste
  • Handful fresh parsley

Method

  1. Cut the tomatoes into large pieces. Finely chop the onions and garlic.
  2. Heat olive oil in a soup pot. Sauté onion, garlic, and chili for 3 minutes.
  3. Add tomatoes and cook for 5 minutes. Pour in the stock and simmer for 20 minutes.
  4. Meanwhile, hard-boil the eggs (8 minutes), peel, and halve them.
  5. Trim the woody ends off the asparagus. Blanch the asparagus for 2 minutes in boiling water, then cool under cold water.
  6. Blend the soup with an immersion blender. Season with lemon juice, salt, and pepper.
  7. Pour the soup into deep bowls. Place 2 egg halves at the bottom of each bowl, arrange 4 asparagus spears diagonally across as power lines.
  8. Garnish with fresh parsley.

Serving notes

  • Serve with extra lemon wedges for more zing.
  • Sprinkle extra chili flakes over the asparagus for a fiery look.
