Soufflé as lung, with an ice cream scoop as nodule: hopeful, warm, and comforting.

A warm soufflé with round scoops of vanilla ice cream, presented as a lung with a clear nodule. This dessert refers to the Pope's lung surgery, offering comfort in a dish: airy, warm, and hopeful.

Ingredients

  • 4 eggs
  • 60 g sugar
  • 40 g flour
  • 250 ml whole milk
  • 1 tsp vanilla extract
  • 30 g butter (plus extra for greasing)
  • 4 scoops vanilla ice cream
  • Powdered sugar, for dusting

Method

  1. Preheat the oven to 200°C.
  2. Lightly grease a large oval baking dish with butter.
  3. Separate the eggs. Beat the egg whites stiff with half the sugar.
  4. Whisk the yolks with the remaining sugar until light yellow and creamy.
  5. Sift the flour over the yolks and mix in.
  6. Heat the milk with the vanilla extract until just below boiling.
  7. Slowly pour into the yolk mixture, whisking constantly.
  8. Gently fold in the egg whites.
  9. Pour the mixture into the baking dish and bake for 20-25 minutes until golden and puffed.
  10. Remove from the oven. Immediately place 3 scoops of ice cream in a row on one side (the lung), and 1 scoop slightly apart, half on the edge, as the 'nodule'.
  11. Dust with powdered sugar for a soft finish.

Serving notes

  • Serve straight from the oven so the soufflé is nicely puffed.
  • Add the ice cream scoops at the table, so they slowly melt on the warm soufflé.
  • Give everyone a spoon to share from the dish.
