IceCube Salad

A cool salad with eggs and feta, a tribute to the IceCube Neutrino Observatory.

A precisely plated salad: a row of halved eggs on fresh greens represents the IceCube Neutrino Observatory. Feta cubes mimic ‘ice’ around them, and dressing lines suggest ‘neutrino tracks’. Solemn, cool, and unmistakably echoing the Antarctic setup.

Ingredients

  • 8 eggs
  • 200 g feta cheese
  • 200 g mixed greens (arugula, lamb's lettuce, baby spinach)
  • 1 cucumber
  • 1 red onion
  • 100 g radishes
  • 4 tbsp olive oil
  • 2 tbsp white wine vinegar
  • 1 tsp coarse mustard
  • salt and pepper

Method

  1. Boil the eggs hard (10 minutes), cool and peel them.
  2. Slice the eggs lengthwise in half.
  3. Wash and dry the greens, spread over a large platter.
  4. Cut the feta into 1.5 cm cubes.
  5. Slice the cucumber into thin half-moons, the radishes into thin rounds, and the onion into thin rings.
  6. Mix olive oil, vinegar, mustard, salt, and pepper into a dressing.
  7. Arrange the egg halves in a precise straight diagonal line over the greens, like detectors in the ice.
  8. Place the feta cubes around the eggs as ‘ice blocks’.
  9. Distribute cucumber, radish, and onion artfully around.
  10. Drizzle the dressing in thin diagonal lines over the salad, like ‘tracks’.
  11. Serve immediately.

Serving notes

  • Serve on a large white platter for maximum ‘polar’ effect.
  • Keep the egg line straight and precise for the recognizable IceCube silhouette.
