Interception Salad with Double Wing

Three chicken pieces as jets and plane, sharp and tangy on a tense salad field.

This salad depicts two fighter jets intercepting a Russian plane: three grilled chicken fillets arranged diagonally on a bed of fresh greens. A sharp dressing and pickled onion add tension. The silhouette of the jets and transport plane is clearly visible.

Ingredients

  • 3 chicken breasts (about 700 g total)
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 red onion
  • 2 tbsp white wine vinegar
  • 200 g mixed salad greens (arugula, lamb's lettuce, little gem)
  • 1 cucumber
  • 2 red pointed peppers
  • 8 radishes
  • 1 lemon
  • 1 tbsp wholegrain mustard
  • 2 tbsp honey
  • 4 tbsp extra virgin olive oil
  • salt and pepper

Method

  1. Slice each chicken breast lengthwise to make 6 long pieces.
  2. Mix 2 tbsp olive oil with paprika, salt, and pepper. Marinate the chicken for 10 minutes.
  3. Grill the chicken on high heat until cooked and nicely striped. Let cool slightly.
  4. Slice the red onion into thin half rings. Marinate with vinegar, a pinch of salt, and 1 tbsp honey.
  5. Cut the cucumber into thin diagonal slices, the peppers into strips, and the radishes into slices.
  6. Make the dressing: whisk lemon juice, mustard, 1 tbsp honey, and 4 tbsp olive oil. Season with salt and pepper.
  7. Spread the salad greens on a large flat platter.
  8. Arrange cucumber, pepper, and radish in clusters to create a landscape below the 'sky'.
  9. Place three chicken pieces diagonally on the salad: two close together as jets, one larger as a transport plane.
  10. Garnish with pickled onion as contrails behind the jets.
  11. Drizzle everything with the dressing.

Serving notes

  • Serve on a large white plate for best contrast.
  • Keep the chicken clearly arranged as jets: do not mix.
  • Want extra heat? Add sliced red chili as a 'warning signal'.
