Invisible Eiffel Salad

The Eiffel Tower built from asparagus, women invisible as radish: a fresh salad with a sharp aftertaste.

A salad built as an Eiffel Tower from green asparagus and roasted chicken, with radish slices as the 'disappeared' women around the base. Outwardly neat and fresh, but the vinaigrette delivers a sharp sting: scandal on a plate.

Ingredients

  • 500 g green asparagus
  • 2 little gem lettuces
  • 2 cooked chicken breasts (about 350 g total)
  • 8 radishes
  • 1 red onion
  • 2 tbsp capers
  • 100 g cherry tomatoes
  • 2 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tsp mustard
  • 1 tsp honey
  • salt and pepper

Method

  1. Wash the asparagus and trim off the woody ends. Boil for 3 minutes in salted water and cool quickly.
  2. Cut the chicken breasts into long, thin strips.
  3. Quarter the little gem lettuces and spread over a large platter as a base.
  4. Slice the radishes thinly. Halve the cherry tomatoes. Cut the red onion into thin rings.
  5. Arrange the asparagus in three criss-cross layers to form an Eiffel Tower silhouette on the lettuce bed.
  6. Lean the chicken strips diagonally against the asparagus as tower supports.
  7. Arrange the radish slices in a ring around the base of the tower: visible, but not in the structure itself.
  8. Scatter the capers, tomatoes, and onion rings around.
  9. Whisk a vinaigrette from olive oil, vinegar, mustard, honey, salt, and pepper. Drizzle over the salad.

Serving notes

  • Serve with baguette for a Parisian touch.
  • Place the salad in the center of the table so everyone can admire the 'tower' before serving.
