Isolation Dome in Congo Soup

Ingredients

  • 1 large round bread roll (approx. 300 g)
  • 2 tablespoons olive oil
  • 1 onion
  • 2 cloves garlic
  • 1 large carrot
  • 1 red bell pepper
  • 1 can diced tomatoes (400 g)
  • 1 liter vegetable broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 tablespoon tomato paste
  • 1 red chili (optional)
  • Salt and pepper to taste
  • 4 tablespoons crème fraîche
  • 4 sprigs coriander

Method

  1. Roughly chop the onion, garlic, carrot, and bell pepper.
  2. Heat olive oil in a large pot. Sauté onion and garlic for 2 minutes.
  3. Add carrot and bell pepper, cook for 5 minutes.
  4. Add tomato paste, cook for 1 minute.
  5. Add diced tomatoes, broth, paprika, cumin, and optionally chili.
  6. Bring to a boil, simmer for 20 minutes.
  7. Blend the soup smooth with a stick blender. Season with salt and pepper.
  8. Cut the bread roll in half. Carefully hollow out the inside, keeping the crust intact.
  9. Divide the soup among four deep plates.
  10. Place a bread half dome-up in the center of each plate, as an isolation chamber.
  11. Garnish with a spoonful of crème fraîche and a coriander sprig on the bread dome.

Serving notes

  • Serve the soup hot, so the bread dome softens from the steam.
  • Place the bread dome centrally in the bowl, not on the edge.
