A spicy salad with sharp red onion, tangy pickles, and grilled pepper, built as the collapsing ceiling of the Kennedy Center. The pepper and feta pieces are angled and loosely stacked, resembling debris. The tension on the plate mirrors the news about the crumbling center.

Ingredients

  • 2 red bell peppers
  • 200 g feta cheese
  • 1 red onion
  • 4 pickles
  • 1 cucumber
  • 4 tbsp red wine vinegar
  • 2 tbsp olive oil
  • 1 tbsp capers
  • 1 lemon
  • 1 tsp chili flakes
  • Salt and pepper

Method

  1. Preheat the grill. Halve the peppers, remove seeds, and grill until charred. Cool and cut into large, slanted pieces.
  2. Cut the feta into thick, irregular chunks.
  3. Slice the red onion into thin rings. Mix with red wine vinegar and let sit for 10 minutes.
  4. Quarter the pickles lengthwise.
  5. Use a peeler to make long ribbons from the cucumber.
  6. Mix olive oil, lemon juice, chili flakes, salt, and pepper for a dressing.
  7. On a large platter, build a 'collapsed ceiling' by loosely stacking the pepper and feta pieces at angles.
  8. Scatter the pickled onion, pickle quarters, cucumber ribbons, and capers around as debris.
  9. Drizzle with the dressing and serve immediately.

Serving notes

  • Serve on a large white platter for maximum contrast.
  • Let some feta and pepper pieces visibly 'fall' for the collapse effect.
  • Offer extra chili flakes on the side for added tension.
