Krakatau Eruption Ice

A volcano of lime sorbet with chocolate lava and meringue ash: tension on your plate.

A dessert shaped like a smoking volcano: a steep tower of sharp lime sorbet, surrounded by dark chocolate sauce as lava flow and meringue 'ash clouds'. The tension of sour and bitter matches the news of the volcanic eruption and the reopening of the airports.

Ingredients

  • 600 ml lime sorbet
  • 100 g dark chocolate
  • 100 ml whipping cream
  • 2 egg whites
  • 100 g fine sugar
  • 1 lime
  • 1 tbsp powdered sugar

Method

  1. Preheat the oven to 120°C.
  2. Whip the egg whites stiff and gradually add the fine sugar until glossy.
  3. Spoon dollops of meringue onto baking paper, forming irregular clouds. Bake 45 minutes and let cool.
  4. Melt the chocolate with the cream into a smooth sauce.
  5. Scoop four tall cones of lime sorbet onto plates: the volcano cones.
  6. Pour warm chocolate sauce from the top down, as lava flow.
  7. Arrange the meringue around the base as ash clouds.
  8. Grate lime over the whole and lightly dust with powdered sugar for extra tension.

Serving notes

  • Serve immediately so the sorbet doesn't melt.
  • Chill the plate in the freezer for extra effect.
  • For extra smoke: add some grated lime on top.
