Lentil soup with a counter of eggs and breadsticks: the Kwik-E-Mart in soup form.

An Indian lentil soup in a rectangular dish, with a row of halved eggs as the counter and breadsticks stacked as the supermarket counter silhouette. The setup refers to Apu’s Kwik-E-Mart: a solemn counter with counter products, neatly presented.

Ingredients

  • 250 g red lentils
  • 1 large onion
  • 2 cloves garlic
  • 1 large carrot
  • 1 red bell pepper
  • 1.5 liters vegetable broth
  • 2 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1/2 tsp chili powder
  • 4 eggs
  • 8 breadsticks
  • 2 tbsp sunflower oil
  • Salt and pepper to taste
  • Coriander (optional, for garnish)

Method

  1. Finely chop the onion and garlic.
  2. Peel the carrot and dice. Dice the bell pepper.
  3. Heat the oil in a soup pot and sauté the onion and garlic for 2 minutes.
  4. Add carrot, bell pepper, garam masala, cumin, turmeric, and chili powder. Sauté for 3 minutes.
  5. Add the lentils and stir well.
  6. Pour in the broth and bring to a boil.
  7. Let the soup simmer for 25 minutes until the lentils are cooked.
  8. Meanwhile, hard-boil the eggs (8 minutes), peel and halve them.
  9. Roughly blend the soup with a stick blender. Season with salt and pepper.
  10. Pour the soup into a rectangular dish or deep rectangular plates.
  11. Along one long edge, arrange a row of halved eggs, rounded side up, as the counter.
  12. Line up the breadsticks tightly behind the eggs as the counter structure.
  13. Optionally garnish with coriander.

Serving notes

  • Serve in a rectangular dish for the counter effect.
  • Stand the breadsticks upright for a neat counter.
  • Serve the soup warm, without further decoration.
