License Plate Scooter Soup

Vegetable soup with 'scooters' of zucchini and carrot, radish as license plate – sharp and elusive.

A sharp, tangy vegetable soup with long strips of zucchini and carrot as electric scooters, each topped with a radish 'license plate.' The scooters are arranged diagonally on the bowl: recognizable, fast, and just out of reach.

Ingredients

  • 2 zucchinis
  • 4 large carrots
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 leek
  • 1 onion
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1.5 l vegetable broth
  • 2 tbsp white wine vinegar
  • 1 red chili pepper
  • 8 radishes
  • salt and pepper to taste

Method

  1. Cut zucchini and carrot into long thin strips (julienne).
  2. Finely chop bell peppers, leek, onion, and garlic.
  3. Heat olive oil in a soup pot. Sauté onion, garlic, and red chili for 3 minutes.
  4. Add bell peppers, leek, zucchini, and carrot. Sauté for 5 minutes.
  5. Add the broth and vinegar. Bring to a boil and simmer for 20 minutes.
  6. Slice radishes into thick rounds.
  7. Season the soup with salt and pepper.
  8. Ladle soup into deep bowls. Lay 2 to 3 strips of zucchini and carrot diagonally on top as scooters.
  9. Place a radish slice at one end of each strip as a license plate.

Serving notes

  • Serve extra radish slices on the side for extra kick.
  • Garnish with fresh parsley for color.
