Lightning Lager Can Soup

Soup with a wink: a tower of sausages and eggs as stacked beer cans in a golden party soup.

A festive, golden-yellow soup featuring a central stack of mini sausages and half eggs: together forming a beer can tower, just like the Californian beer heist. This soup celebrates sharing and enjoying together, exactly what the stolen beer was meant for.

Ingredients

  • 2 onions
  • 2 cloves garlic
  • 1 leek
  • 2 carrots
  • 1 liter chicken stock
  • 250 ml blond beer (alcohol-free optional)
  • 4 waxy potatoes
  • 2 tbsp olive oil
  • 8 small boiled eggs
  • 16 mini smoked sausages
  • 1 bunch chives
  • salt and pepper to taste

Method

  1. Chop the onions and finely mince the garlic.
  2. Slice the leek and carrots, dice the potatoes.
  3. Heat olive oil in a large pot and sauté onion and garlic for 3 minutes.
  4. Add leek, carrot, and potato, cook for 5 minutes.
  5. Pour in the stock and beer. Bring to a boil and simmer for 20 minutes.
  6. Blend the soup with a stick blender until smooth and golden. Season with salt and pepper.
  7. Heat the mini sausages as per package instructions. Cut the boiled eggs in half.
  8. Pour the soup into wide bowls. Stack 4 mini sausages in the center of each bowl, top with a half egg, rounded side up. Repeat for each bowl to create a 'beer can tower'.
  9. Garnish with finely chopped chives.

Serving notes

  • Serve the soup in wide bowls so the tower is clearly visible.
  • Place the bowls on the table and let everyone topple their own 'can tower' with a spoon.
