Linden Soup on the Promenade

A clear soup with leek as linden, carrot as promenade: a restrained tribute to Prince Claus.

A quiet, clear vegetable soup with four upright pieces of leek in the center, evoking the young royal linden tree planted in memory of Prince Claus. Carrot pieces around them suggest a simple promenade. The plating is a restrained nod to the commemoration in Hitzacker.

Ingredients

  • 2 liters vegetable broth
  • 2 leeks (halved lengthwise)
  • 3 carrots (cut diagonally into 5 cm pieces)
  • 1 small celeriac (diced)
  • 2 bay leaves
  • salt and pepper to taste

Method

  1. Heat the broth in a large pot.
  2. Cut the leeks in half lengthwise. Reserve four nice straight pieces (about 10 cm each).
  3. Slice the rest of the leek into half rings.
  4. Cut the carrots diagonally into 5 cm pieces, so they resemble small trunks.
  5. Dice the celeriac into small cubes.
  6. Add celeriac, leek rings, and bay leaf to the broth. Simmer for 20 minutes.
  7. Add the carrot pieces and cook for another 10 minutes.
  8. Season with salt and pepper.
  9. Divide the soup among four deep bowls.
  10. Place a piece of leek upright in the center of each bowl as the trunk of the linden.
  11. Arrange the carrot pieces in a semicircle around the leek, as the promenade.

Serving notes

  • Serve without extra garnish for a sober look.
  • Place the bowls quietly on the table, without movement.
