Neat veggie rolls, tidy outside, with a sharp filling you don’t expect.

Grilled aubergine and zucchini rolls, lined up like lock cylinders. Shiny and tidy outside, with a sharp feta-chili filling inside. The rolls rest on a bed of red pepper sauce: as deceptively safe as a fake inspection at the door.

Ingredients

  • 2 aubergines
  • 2 courgettes
  • 200 g feta cheese
  • 1 red chili pepper
  • 2 cloves garlic
  • 2 red bell peppers
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Method

  1. Preheat the oven to 200°C.
  2. Slice the aubergines and courgettes lengthwise into thin strips.
  3. Brush the strips with olive oil and grill them on a baking tray for 15 minutes until soft and lightly browned.
  4. Roast the bell peppers in the oven until the skin is blackened (about 20 min). Let cool, peel, and puree the flesh with 1 clove garlic, 1 tbsp olive oil, and lemon juice until smooth. Season with salt and pepper.
  5. Crumble the feta. Mix with finely chopped chili pepper, 1 clove garlic, oregano, and some pepper.
  6. Place some feta mixture on each aubergine or courgette strip and roll tightly into a cylinder.
  7. Spoon the pepper sauce onto a rectangular platter. Arrange the rolls in a neat row on the sauce, like a series of lock cylinders.
  8. Drizzle with extra olive oil and serve.

Serving notes

  • Serve the rolls lined up neatly for maximum effect.
  • Garnish with extra chili flakes for more heat.
