Lunar Crater Mousse

A tangy mousse with a deep crater of berry coulis and cookie crumble as lunar debris.

A sharp lemon-lime mousse with a deep 'crater' of dark berry coulis, surrounded by cool crumble. Presented as the fresh impact on the moon: a round mousse with a hollow center, cookie rubble around it. The tense contrast of sour and sweet echoes the news of the rare impact.

Ingredients

  • 3 lemons (juice and zest)
  • 2 limes (juice and zest)
  • 100 g fine caster sugar
  • 4 eggs
  • 250 ml whipping cream
  • 4 sheets gelatin
  • 100 g black currants (frozen, thawed)
  • 50 g powdered sugar
  • 100 g digestive biscuits
  • 40 g unsalted butter

Method

  1. Soak the gelatin in cold water.
  2. Zest and juice the lemons and limes.
  3. Whisk the eggs with sugar over a bain-marie until thick and fluffy.
  4. Add the citrus juice and zest.
  5. Squeeze out the gelatin and dissolve in the warm mixture.
  6. Let cool to room temperature.
  7. Whip the cream until stiff and fold into the citrus mixture.
  8. Divide the mixture over four round molds (or deep plates) and create a deep hollow in the center (the crater). Chill at least 2 hours.
  9. Crush the biscuits and mix with melted butter. Scatter around the mousse as 'lunar debris'.
  10. Puree the black currants with powdered sugar into a coulis. Fill the crater with the dark coulis.
  11. Serve cold, so the contrast of flavors and temperatures remains.

Serving notes

  • Serve on a dark plate for extra moon effect.
  • Garnish with extra lemon zest for a fresh 'moonbeam'.
