Mosquito Landing Bowl

Potato salad with halved eggs as mosquitoes on green beans: the West Nile virus on your plate, but comforting.
Ingredients
- 800 g waxy potatoes
- 200 g green beans
- 4 eggs
- 1 red onion
- 1 red bell pepper
- 3 tbsp mayonnaise
- 2 tbsp full-fat yogurt
- 1 tbsp mustard
- 2 tbsp chives, finely chopped
- 1 tbsp parsley, finely chopped
- 2 tbsp olive oil
- 1 tbsp white wine vinegar
- salt and pepper
Method
- Peel the potatoes and cut into large pieces. Boil in salted water for 15 minutes until cooked. Drain and let cool to lukewarm.
- Boil the green beans for 7 minutes until just tender. Drain and rinse with cold water. Let drain.
- Boil the eggs for 8 minutes until hard. Cool under cold water, peel and halve.
- Slice the red onion into thin half rings. Dice the bell pepper.
- In a large bowl, mix mayonnaise, yogurt, mustard, chives, parsley, olive oil, and vinegar to make a dressing. Season with salt and pepper.
- Gently mix the potatoes, bell pepper, and onion with the dressing.
- Lay the green beans diagonally as a wide strip on a large platter: this is the 'water puddle'.
- Spoon the potato salad on both sides of the bean strip.
- Place the halved eggs on the bean strip, like mosquitoes just landed.
- Sprinkle with extra chives. Serve warm or at room temperature.
Serving notes
- Place the halved eggs at an angle on the beans, so they really look like mosquitoes.
- Optionally use black peppercorns as 'mosquito heads' on the eggs.
- Serve in a large bowl so the landing scene remains visible.
