Night Train Broth

A festive clear broth with baguette slices and boiled eggs lined up like train carriages across the soup. The row symbolizes the European night train: visible, festive, and perfect for sharing.

Ingredients

  • 2 liters chicken broth (or vegetable broth for veggie)
  • 2 leeks
  • 3 carrots
  • 1 small celeriac
  • 2 bay leaves
  • 4 eggs
  • 1 baguette
  • fresh parsley (handful)
  • salt and pepper to taste

Method

  1. Cut leek, carrot, and celeriac into pieces.
  2. Bring the broth to a boil with the vegetables and bay leaf. Let simmer for 30 minutes.
  3. Meanwhile, hard-boil the eggs (10 minutes), peel and cut into thick slices.
  4. Cut the baguette diagonally into long, thin slices.
  5. Strain the broth, season with salt and pepper.
  6. Divide the broth among wide bowls or deep dishes.
  7. Lay the baguette slices in a long, slightly curving row across the soup, like a train track.
  8. Place an egg slice on each bread piece as a 'carriage'.
  9. Garnish with chopped parsley as 'green stations' along the track.

Serving notes

  • Serve in a wide dish so the train is clearly visible.
  • Let guests 'board' by picking up their 'carriage' themselves.
