Opto-Medicinal Brain Broth

Soup with a brain silhouette from egg and carrot, a nod to the optogenetics breakthrough.

Clear vegetable soup with a central half hard-boiled egg yolk as the brain, surrounded by light yellow carrot strips as neural pathways. The plating forms a brain silhouette, nodding to the optogenetics Nobel breakthrough.

Ingredients

  • 2 liters vegetable broth
  • 4 eggs
  • 4 large carrots
  • 1 leek
  • 1 small celeriac
  • 2 celery stalks
  • 1 onion
  • 2 cloves garlic
  • 2 bay leaves
  • 4 sprigs parsley
  • salt and pepper to taste

Method

  1. Bring the vegetable broth to a boil.
  2. Cut carrot, leek, celeriac, and celery into thin julienne strips.
  3. Peel and halve the onion, finely chop the garlic.
  4. Add onion, garlic, bay leaves, and the sliced vegetables to the broth. Simmer for 20 minutes.
  5. Meanwhile, hard-boil the eggs for 8 minutes. Cool, peel, and halve lengthwise.
  6. Remove bay leaves from the soup. Season with salt and pepper.
  7. Divide soup over 4 deep plates. Place a half egg yolk, yolk side up, in the center of each as the brain.
  8. Arrange thin carrot strips around the yolk in a swirling pattern to form a brain silhouette.
  9. Garnish with parsley.

Serving notes

  • Serve in deep plates with the brain silhouette visible on top.
  • Offer fresh bread for dipping.
