Stacked veggies as banned books, with a sharp bite inside.

A fresh salad with rows of cucumber and tomato slices stacked like books, abruptly blocked by a line of roasted croutons: the silhouette of banned books. The outside looks neat, but inside is a sharp dressing. Fits the news about banned Rooney books.

Ingredients

  • 1 cucumber
  • 4 tomatoes
  • 1 red onion
  • 150 g feta cheese
  • 2 slices sturdy bread (for croutons)
  • 4 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp mustard
  • 1 clove garlic
  • salt and pepper to taste
  • handful fresh parsley

Method

  1. Preheat the oven to 180°C.
  2. Cut the bread into thick strips, toss with 1 tbsp olive oil, and roast for 10 minutes to make croutons.
  3. Slice the cucumber into thick, straight slices about 1 cm thick.
  4. Slice the tomatoes into similar slices.
  5. Cut the red onion into thin rings.
  6. Cut the feta into cubes.
  7. Make the dressing: mix 3 tbsp olive oil, red wine vinegar, mustard, pressed garlic, salt, and pepper.
  8. On each plate, arrange alternating cucumber and tomato slices in a row like a stack of books.
  9. Place a dense row of croutons upright in the middle, as a blockade between the books.
  10. Scatter onion, feta, and parsley over the 'books'.
  11. Drizzle with the dressing.

Serving notes

  • Serve on a rectangular plate for the bookshelf effect.
  • Stand the croutons upright for the 'banned' look.
  • Let guests break through the crouton line themselves.
