Ingredients

  • 700 g chicken breast
  • 2 orange bell peppers
  • 2 red onions
  • 1 lime
  • 2 cloves garlic
  • 2 tbsp sriracha
  • 2 tbsp honey
  • 3 tbsp olive oil
  • 1 cucumber
  • 100 g lamb's lettuce
  • 2 tbsp white wine vinegar
  • 1 tsp ground cumin
  • salt and pepper
  • 8 wooden skewers

Method

  1. Cut the chicken breast into long strips. Mix sriracha, honey, 2 tbsp olive oil, cumin, pressed garlic, juice of 1 lime, salt and pepper for a marinade.
  2. Marinate the chicken strips for at least 30 minutes.
  3. Cut the orange bell peppers into long strips about 1 cm wide. Slice the red onions into thin rings.
  4. Thread each skewer with alternating chicken and bell pepper strips, ensuring the pepper forms a flag at the top.
  5. Grill the skewers in a grill pan or on the barbecue for 8-10 minutes until cooked and lightly charred.
  6. Mix lamb's lettuce, cucumber ribbons, red onion, white wine vinegar and 1 tbsp olive oil, salt and pepper for a fresh salad.
  7. Arrange the salad in a wide strip across the center of the plate.
  8. Lay the skewers in a tight row diagonally over the salad, like a parade through a street.
  9. Make sure the pepper flags stick out at the top for a recognizable parade effect.

  • Serve the skewers in a straight row for the parade effect.
  • Drizzle extra lime juice over the salad for extra tension.
