Parrots on a Crowded Perch

Eggs on a perch, as cramped as the parrots’ journey.

Four halved boiled eggs lined up on a thin toasted bread strip: parrots on a perch, presented sparsely. The plate shows the lack of space and comfort, just like the animals in the news. Minimalist, with only a few parsley leaves as meager 'feathers'.

Ingredients

  • 4 slices stale bread
  • 4 eggs
  • 1 tablespoon olive oil
  • 1 handful flat-leaf parsley
  • salt
  • black pepper

Method

  1. Boil the eggs for 8 minutes, cool in cold water and peel.
  2. Slice the eggs in half lengthwise.
  3. Remove the crusts from the bread and cut each slice into two long strips.
  4. Brush the bread strips lightly with olive oil and toast them in a dry pan until golden and crisp.
  5. Place a bread strip diagonally on each plate as a 'perch'.
  6. Arrange four egg halves per perch, rounded side up, tightly together like parrots in a row.
  7. Sparingly garnish with a few parsley leaves as 'feathers'.
  8. Sprinkle lightly with salt and pepper.

Serving notes

  • Serve on a long plate to emphasize the crowded perch effect.
  • Leave plenty of white space on the plate for a sense of shortage.
