Ingredients

  • 200 g beef carpaccio (store-bought or thinly sliced)
  • 1 large cooked beetroot
  • 2 tbsp capers
  • 50 g arugula
  • 50 g Parmesan cheese, shaved
  • 2 tbsp coarse mustard
  • 2 tbsp red wine vinegar
  • 4 tbsp extra virgin olive oil
  • 1 tsp coarse sea salt
  • 1 tsp freshly ground black pepper

Method

  1. Slice the cooked beetroot into thin rounds, about the same size as the carpaccio slices.
  2. Arrange the beetroot slices in the center of four plates as a circle, forming one large red button.
  3. Place the beef carpaccio around the beetroot, creating a clearly defined red button with a meat border.
  4. Mix mustard, red wine vinegar, and olive oil into a sharp dressing.
  5. Drizzle the dressing over the beetroot and carpaccio.
  6. Scatter capers and shaved Parmesan in a ring on the edge of the beetroot (the button's rim).
  7. Place a small pile of arugula in the center as the button's 'light'.
  8. Sprinkle with sea salt and black pepper.
