Peat Fire Crumble with Rainclouds

Warm berry crumble with whipped cream clouds and chocolate burn marks, like the blushed landscape of the Hoge Venen.

A warm oval dish of dark berry crumble with a thick golden topping. White whipped cream clouds extinguish the smoldering peat. Chocolate pieces represent burnt patches. The dessert resembles the Hoge Venen landscape after the fire and the saving rain.

Ingredients

  • 500 g blackberries (fresh or frozen)
  • 250 g blueberries
  • 100 g granulated sugar
  • 1 tbsp lemon juice
  • 175 g flour
  • 100 g cold unsalted butter
  • 75 g light brown sugar
  • 1 tsp cinnamon
  • 50 g dark chocolate
  • 200 ml whipping cream
  • 1 sachet vanilla sugar

Method

  1. Preheat the oven to 180°C.
  2. Mix blackberries, blueberries, granulated sugar and lemon juice in a bowl.
  3. Spoon the fruit mixture into a large oval baking dish (for the peat landscape).
  4. Mix flour, brown sugar and cinnamon. Cut the butter into cubes and rub into coarse crumbs.
  5. Spread the crumbs over the fruit, leaving some fruit visible (burnt patches).
  6. Roughly chop the chocolate. Sprinkle the pieces on the visible fruit spots as burn marks.
  7. Bake the crumble for 35 minutes until golden brown.
  8. Meanwhile, whip the cream with vanilla sugar until stiff.
  9. After baking, spoon dollops of whipped cream on top as rainclouds over the warm surface.

Serving notes

  • Serve in the oval dish for the 'landscape' effect.
  • Make sure the whipped cream clouds are clearly on top, like rain.
  • Serve warm for maximum comfort.
