A stew as warming as the High Fens, comforting with every bite.

A hearty stew with smoked sausage, potatoes and beans, warming like a burning peatland. This dish brings comfort and unity after disaster, just like the Belgian emergency services.

Ingredients

  • 400 g smoked sausage, sliced
  • 600 g waxy potatoes, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 1 red bell pepper, chopped
  • 1 can white beans (400 g), drained
  • 400 ml beef stock
  • 2 tsp smoked paprika powder
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Handful fresh parsley, roughly chopped

Method

  1. Heat olive oil in a large pot and sauté onion and garlic for 3 minutes.
  2. Add carrot, bell pepper and potatoes, cook for 5 minutes.
  3. Add sliced sausage and fry until lightly browned.
  4. Stir in smoked paprika powder.
  5. Pour in the stock, bring to a boil and simmer for 20 minutes.
  6. Add beans and simmer for another 5 minutes.
  7. Season with salt and pepper.
  8. Garnish with parsley before serving.

Serving notes

  • Serve in one big dish, steaming, at the center of the table.
  • Garnish with extra parsley for a green accent, symbolizing hope after the fire.
  • Eat with crusty bread to share.
